Receipe of the Day

Pasta Indiano.
I came up with this name because even though pasta is an italian dish this one has been indianised . I learnt this receipe from my dear friend Anu.

Ingredients: pasta( 500 gms), Oil 2 tablespoon, Chopped cauliflower, carrots, mushrooms, french beans, sugar snaps,brocolli, bell peppers, one medium sized onion finley chopped, chopped garlic(5-6 cloves), one tin of tomato puree (alternately use four medium sized tomatoes chopped very finely), grated parmesan or mozarella cheese, oregano, red chilli flakes, red chilli powder, crushed pepper and salt to taste.

Note: Julian cut the vegetables. i.e. cut them lengthwise into thin long strips.

Method: Boil the pasta in a large pan with water enough to completely cover the pasta. Add salt and 1 teaspoon of oil. Cook until the pasta is almost done,Drain and set aside.
Heat oil in a cooking pan and saute the garlic, add chopped onions and saute until transparent. Now add the tomato puree, all the chopped veggies, red chilli powder, salt and continue cooking on medium flame until the veggies are half done. Donot over cook the vegetables as they become lumpy and donot taste very good. Now, add a little water arnd 1/4th cup . Add the pasta and see to it that you get a thick tomato gravy and it doesnot dry up. Now add the oregano, Crushed pepper, red chilli flakes and stir. Add parmesan cheese and cook until the cheese melts. Serve hot. Pasta Indiano is ready to eat.
